This Delicious Lentils and Sausage Stew will be ready in just under 40 minutes!
Temps are getting cooler and with that in mind, I’ve been focusing on hearty cozy meals to serve for my family.
Case in point this Easy Sausage and lentils stew you can whip up super quickly with just a few ingredients.
You can eat this as is or serve it over white rice (which is a favorite in our home)
You may also substitute the sausage for any protein you’d like or make it vegetarian. The meal will be just as hearty.
According to the Mayo Clinic:
“Lentils are grouped with beans and peas as part of the legume family because, like all legumes, they grow in pods. Lentils are high in protein and fiber and low in fat, which makes them a healthy substitute for meat. They’re also packed with folate, iron, phosphorus, potassium, and fiber.”
So go ahead and eat up! It’s so nutritious and heart healthy.

Delicious Sausage and Lentils Stew
Nothing beats a hearty stew on a chilly day, this Sausage and Lentils stew is made exactly for those days where coziness is needed.
Ingredients
- 225 grams of Lentils (1 cup)
- 3 Thinly Sliced Sausages (remove casing)
- Half an onion (finely chopped)
- 2 Garlic Cloves (finely chopped)
- 2 Medium sized carrots (sliced)
- 1 Tbsp of Extra Virgin Olive Oil
- 1 Tsp of Paprika
- 1 Tsp of Ground Garlic
- 1 Tbsp of Chopped Cilantro
- Salt and Pepper to Taste
Instructions
Heat one tablespoon of the oil in a large frying pan with tall sides or a large pan, add chopped onions and carrots until fragrant without burning. Transfer to a plate.
Sautee sausages over medium heat for 6–8 minutes, or until lightly browned on both sides. Transfer to a plate and return the pan to the heat.
Add Lentils, cover with water or vegetable stock.
Add the pre-cooked onions and carrots and stir.
Add chopped garlic and seasonings to taste.
Bring to a simmer, stirring occasionally.
Cook until lentils and carrots are tender.
If needed add more water or stock.
Sprinkle with chopped Cilantro when ready to serve!
Notes
Want a spicy version? Add Red Chili flakes or spicy pepper oil.
